Tahini Molasses: The Combination of Carob Molasses and Tahini
"Tahini molasses", which combines tahini and molasses, is one of the most familiar flavors of the Turkish breakfast table. Traditionally known for grape molasses, this duo is also frequently prepared with carob molasses on the Mediterranean coast and especially in regions where carob grows. The oily and slightly bitter taste of tahini harmonizes with the dark, sweet and slightly cocoa-like character of carob molasses.
In this article, we discuss the traditional place of tahini molasses, the difference of carob molasses in this mixture, the effect of proportions on consistency and taste in the light of scientific studies, the nutritional properties of the mixture and recommendations for home preparation and storage.
A Traditional Breakfast
Tahini molasses is a popular breakfast in Turkey, especially during the winter months. In the master's thesis completed in 2003 at the Middle East Technical University examining the rheology of tahini-molasses mixtures, it is stated that tahini-molasses is a traditional Turkish breakfast product and is especially preferred in winter due to its high energy content. In the same study, it is emphasized that tahini and molasses are usually sold separately in Turkey and that consumers prepare the mixture according to their own tastes.
Although this thesis was made with grape molasses, the determination is also valid for carob molasses: Tahini molasses is prepared by mixing two separate products at the table rather than a ready-made product at most homes. This causes the ratio to vary from person to person.
Why is carob molasses so compatible with tahini?
Tahini is a thick paste rich in fat and protein, obtained by finely grinding roasted sesame seeds. Carob molasses, on the other hand, is a thickened, sugar-rich, dark colored product. The fact that the two products complement each other in terms of taste and texture is the main reason why the mixture is loved.
| Taste balance | The sweetness of molasses softens the slightly bitter and oily taste of tahini. |
| Texture | When fluid molasses and dark tahini are combined, a creamy consistency is formed that can be spread on bread. |
| Aroma | The dark flavor of carob molasses, reminiscent of cocoa, gives the mixture a character reminiscent of a chocolate paste. |
Carob molasses has a high sugar content. In the 2007 study of Özcan, Arslan and Gökçalık, the total sugar content of carob syrup (molasses) was found to be 63.88 percent; potassium, phosphorus and calcium were reported to be the minerals with the highest values in the syrup. This dense sugar structure is the main factor that determines the sweetness and consistency of the mixture when mixed with tahini.
The Effect of Ratios on Consistency: What Does the Science Say?
Tahini molasses mixtures have been examined rheologically in the field of food engineering, that is, in terms of flow and consistency behavior. These studies also shed light on the question of "how much tahini, how much molasses" at home.
Working with different molasses, including carob syrup: In the 2019 study of Kamışlı and Mohammed, tahini mixtures prepared with date syrup, mulberry molasses, grape molasses and carob syrup were examined at molasses ratios ranging from 20-55 percent and at temperatures of 25-60 °C. It was reported that all mixtures showed a shear-thinning (pseudoplastic) flow; it was reported that the apparent viscosity increased as the molasses ratio increased and decreased as the temperature increased.
Studies with grape molasses: In Arslan's 2003 thesis, mixtures containing 20-32 percent tahini were examined between 35-65 °C; it was found that all mixtures showed non-Newtonian flow, thinning with sliding, viscosity increased as the tahini ratio increased and decreased with temperature. In the 2002 study of Alpaslan and Hayta, it was reported that the addition of molasses improved the emulsion stability of the mixture and that there were significant differences between the mixtures in terms of oiliness, mouth-coating feeling, taste and general taste.
These findings can be interpreted in practice as follows:
| Variable | Effect on the mixture |
|---|---|
| Temperature | As it heats up, the mixture becomes fluid; it thickens in the cold |
| Mixing | Due to the structure thinned by slip, it flows more easily as it is mixed |
| Addition of molasses | It can contribute to the emulsion being more stable |
| Molasses variety | The consistency and Brix value of the molasses itself change the result of the mixture |
The last item is particularly important for carob molasses. It has been reported that the Brix values of commercial carob molasses sold in Turkey can vary between approximately 70 and 83 °Bx (Orhan et al., 2025). The mixture prepared with a thicker molasses will be significantly thicker than one prepared with a more fluid molasses in the same proportion.
How to Prepare Tahini Molasses at Home?
There is no "one right ratio" in tahini molasses; however, some starting points make it easy to experiment.
| Balanced mix | 1 part tahini + 1 part carob molasses |
| Sweeter mix | 1 part tahini + 1.5 parts carob molasses |
| Denser and less sweet mixture | 2 parts tahini + 1 part carob molasses |
In the introduction of Arslan's thesis, it is mentioned that a military specification includes a ratio of 60 percent molasses and 40 percent tahini; this ratio corresponds to a sweet mixture dominated by molasses.
Things to consider when preparing:
1. Mix the tahini well in the jar before using it; the oil may rise to the surface while waiting for the tahini.
2. First, put the tahini in the bowl, add the molasses slowly and mix as if whisking with a spoon. Initially, the mixture may seem curdled; as you continue mixing, a smooth consistency forms.
3. If the products are cold during the winter months, the mixture may be too thick. Soaking the jars in warm water for a short time makes mixing easier; this is in line with the behavior of decreasing viscosity with temperature observed in research.
4. If desired, you can sprinkle cinnamon, walnuts or hazelnuts on it.
Nutritional Properties: An Energy-Dense Breakfast
Tahini molasses is a combination of two energy-dense products: Tahini contributes fat and protein, while carob molasses contributes natural sugars and minerals. Therefore, the mixture gives high energy even in small amounts. This high energy content is also the background of its traditional preference in winter.
The mineral content of carob molasses is remarkable. Özcan et al. stated that carob fruit, flour and syrup are rich in calcium, potassium, magnesium, sodium and phosphorus; He reported that the elements with the highest values in syrup are potassium, phosphorus and calcium.
However, portion control is important due to the energy and sugar density of the mixture:
- 1–2 tablespoons of tahini molasses for breakfast is a reasonable serving for most people.
- People who need to monitor their blood sugar should evaluate the molasses ratio and total amount with their healthcare professional.
- Sesame is an allergenic food; those who are allergic to sesame should not consume mixtures containing tahini.
Carob molasses is also consumed among the people with the thought that it is good for some ailments. In a 2025 study by Orhan et al., it was concluded that commercial carob molasses, which is consumed in Turkey with the thought that it is good for tonsillitis in children, is not as effective as expected on the relevant microorganisms. Tahini molasses should not be considered as a treatment tool, but as part of a balanced breakfast.

Quality: Molasses and Tahini Selection
The taste and safety of the mixture depends on the quality of the products used. In the study of Orhan et al. on commercial carob molasses, it was reported that the HMF value exceeded the maximum limit of 15 mg/kg in the TS 13717 standard in all samples examined, and this was most likely due to long-term storage under inappropriate conditions. For this reason, the following points can be considered when choosing molasses:
- Only carob (and water) in the ingredient list
- Clearly including manufacturer, origin and batch information
- The product is stored in a cool, dry and sun-free place
- No rancid smell in tahini
Tahini Beyond Molasses: Spreadable Carob Products
The tahini molasses logic can also be applied to other pastes. In Bozdoğan's 2022 study, carob molasses and carob powder were added to peanut butter in different proportions; It was reported that the amount of phenolic substances and antioxidant activity increased with the addition of molasses or powder, and in sensory evaluation, the sample containing 5 percent carob molasses stood out among the samples with molasses. This result shows that carob molasses can be used not only with tahini but also with different oilseed pastes.
You can also use tahini molasses at home in different ways:
- As a topping on yogurt or porridge
- With toast and banana
- As a sweetener and flavoring in cookie or cake doughs
- As a hot drink mixed with milk
Frequently Asked Questions
What ratio is best for tahini molasses? There is no single correct ratio. Many people prefer to mix in equal proportions; the ratio of molasses can be increased for a sweeter mixture and tahini for a thicker mixture.
Is there a difference between carob molasses and grape molasses when mixed with tahini? Yes. Carob molasses is darker in color and has an aroma reminiscent of cocoa. The consistency depends on the density (Brix value) of the molasses.
Why does tahini molasses look like it's curdled? At the beginning of mixing, fatty tahini and sugary molasses may not be completely homogeneous. The consistency becomes smoother as mixing continues; It has also been reported in studies that molasses improves emulsion stability.
Can ready-mixed tahini molasses be stored? It is recommended to prepare it in small quantities and consume it in a short time. If it is to be stored, it should be kept in a clean and closed jar in a cool place.
